Spiced Cauliflower Rice
This flavorful spiced cauliflower rice is a delicious and healthy vegan alternative to traditional rice dishes. It's packed with aromatic spices and makes a perfect side dish or light meal.
Ingredients:
- 1 medium cauliflower, grated
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cayenne pepper optional
- Salt and pepper to taste
- Fresh cilantro leaves, for garnish
Instructions:
Warm up a big pan with olive oil over medium-low heat
Add the minced garlic and chopped onion and saut until the onions are fragrant and clear
Add the grated cauliflower, cumin, coriander, turmeric, and cayenne pepper if using and mix them in
Cook, stirring every now and then, for about 5 to 7 minutes, or until the cauliflower is soft
Add pepper and salt to taste
Before serving, sprinkle with fresh cilantro leaves
