Grilled Chicken Kabobs
These grilled chicken kabobs are a perfect summer dinner option. They're quick to make and bursting with flavor. The marinade adds a zesty touch to the tender chicken and veggies. Great for a weeknight meal or a barbecue with friends and family.
Ingredients:
- 1 lb chicken breast, cut into 1-inch pieces
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions:
Put olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a bowl
This will make a marinade
Put pieces of chicken, bell pepper, onion, and zucchini on the wet wooden skewers one after the other
Fill a small dish with water and pour the marinade over the skewers
Allow them to sit for 15 to 20 minutes
Warm up the grill over medium-high heat
For 10 to 12 minutes, flip the kabobs every so often, until the chicken is cooked all the way through and the vegetables are slightly charred
