No-Bake Vegan Paleo Ice Cream Sandwiches

Ingredients:
- 2 cups raw cashews, soaked overnight
- 1/2 cup coconut oil, melted
- 1/2 cup maple syrup
- 1/4 cup coconut milk
- 2 teaspoons vanilla extract
- Pinch of sea salt
- 16 paleo cookies store-bought or homemade
Instructions:
Drain and rinse the soaked cashews
In a food processor, blend cashews, melted coconut oil, maple syrup, coconut milk, vanilla extract, and sea salt until smooth and creamy
Line a baking dish with parchment paper, spread half of the ice cream mixture evenly, and freeze until firm
Once firm, layer the paleo cookies on top of the ice cream
Spread the remaining ice cream mixture over the cookies and freeze until completely firm
Slice into squares or rectangles to form sandwiches
Serve immediately or store in the freezer until ready to enjoy
