Cashew Orange Mango Quinoa Salad



This refreshing vegan salad combines the nutty flavor of quinoa with the sweetness of mango and orange, topped with crunchy cashews and fresh cilantro. The citrusy dressing ties all the flavors together beautifully, making it a perfect side dish or light meal for any occasion.

Ingredients:

  • 1 cup quinoa, cooked and cooled
  • 1 orange, peeled and diced
  • 1 ripe mango, peeled and diced
  • 1/2 cup cashews, toasted
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup orange juice
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • Salt and pepper to taste

Instructions:

In a large bowl, combine quinoa, diced orange, diced mango, toasted cashews, chopped cilantro, and finely chopped red onion

In a small bowl, whisk together orange juice, olive oil, maple syrup, salt, and pepper to make the dressing

Pour the dressing over the salad and toss gently to combine

Refrigerate for at least 30 minutes before serving to allow flavors to meld

Serve chilled and enjoy!
